At Mandy's Private Party

It was Mandy's friend 40th birthday private party and the entire restaurant was reserved just for them. It was a great birthday night most guests were introduced to new Moroccan flavors prepared by Chef Karim and his wife Chantale, the performance of Elise Calcoa the dancer passed the highest standards of belly dancing. Unfortunately, Oasis restaurant ended up getting a one-star review on Yelp because one customer could not get in, dine-in and join the party. What was best Oasis restaurant staff can do to prevent this variability besides putting up a board by the restaurant door stating closed for a private party?

Foggy Bay String Band



The Foggy Bay String Band plays Old Time American music. The term “Old Time" music refers to traditional dance tunes and songs primarily of the Appalachian Mountains in the southeast United States, as performed by immigrants who remembered ancient melodies and ballads from Scotland, Ireland, and other European cultures. 
This music was strongly influenced over the past three hundred years by African-American instruments (especially the five-string banjo) and rhythms. In addition to the Appalachian mountain range where the "Scots-Irish" pioneers first settled, the larger region where the originators of this music can be found includes up and down the Father of Waters, otherwise known as the Mississippi River.  
In the middle of the Twentieth Century, many of the Old Time melodies were adapted into the faster-paced stage music called Bluegrass but Old Time music lovers prefer the older styles handed down in tradition from long before any recorded music existed. In towns and farms throughout the region, the residents continue to play the music of their parents and to pass it down to their children, with the music changing and evolving as it travels from one generation to the next.
All of us in the band are really enjoying getting to know the owners Karim and Chantale and playing at the Oasis every First and Third Thursday of the month from 6:00 pm to 9:00 pm.

Just An Opinion

People's opinions do change depending on their culture and profession. In this Video called Why You Should Quit Social Media, I think the speaker Dr. Cal Newport is right as Computer Scientist but as a businessman who relies on customers to sell his/her products without Social Media, he/she won't be able to make it.

A Family Time Can be at Work Too


      Having a family run business comes with its advantages. In my case, all my kids had a chance to learn business ethics from handing out a menu to customers, filling out drinks, doing prep work, helping in the cooking line, and spending time with their Mom Chantale and their Dad Karim.

     Time has changed, my oldest Alim moved away to pursue his dreams as Alumni in Electrical Engineering and as college football player at Northern Arizona University while the other two Wasim and Ayman are still helping at Oasis booth at Farmers Market every Thursday.

     I think family time is so precious and each parent needs to get the most out of it and to create good and lasting memories while she/he can.

Curry Spice VS Curry Paste


            Curry Powder is ground fenugreek seeds, and Curry Paste is a mixture of different spices. If we add ground chili powder to the Curry Paste, we will obtain red curry paste, and if we add turmeric to the Curry Paste, we will obtain yellow curry paste.
As a conclusion, Curry Paste is a combination of fenugreek seeds and other spices depending on chef's taste. Our preferred Curry Paste is a mix of fenugreek seeds powder, seven spices, cayenne pepper, black pepper, anise, fresh garlic, coriander, salt, cumin, olive oil and some white vinegar.
